Grocery shopping bill for the week: $33!!!
That includes the ingredients for four dinners + leftovers, 5 lunches, and juice for Matt and I each day this week.

I've been using a recipe for Shepherd's Pie from the Engine 2 recipe book for a while and it's always been a favorite for us but I made some changes for last night's dinner.
Instead of the mashed potato topping, I baked three sweet potatoes and steamed half a head of cauliflower. After adding garlic and seasoning I pureed it in the food processor. A lovely hue of orange which makes me so happy.
Instead of using "meat" crumbles that the recipe calls for, I cooked some lentils (red and french green) with a ton of kale. When the lentils were soft, I evaporated much of the moisture and mashed with a spoon in the pot. That was the first layer. The next layer was a frozen veggie mix.
There is something nostalgic about the perfectly cut carrots, corn, and pea mixture. There wasn't a small bag of this mix at my market so I ended up buying 5 pounds. Ouy. Hope I'm feeling nostalgic for a while.
After spreading the sweet potato mix on top of the fillings I baked the whole pan at 375 for about 30 minutes. On Matt's I used some Worcestershire and he put some BBQ sauce on his too. I used hot sauce which was perfect.

And even though he missed his Dad, he's still a mama's boy. I sent this to my brother and he said he look dweeby and kind of cross eyed. I couldn't stop laughing. He is so precious. <---Luke, not my brother.
