A friend gave me a recipe recommendation and for the first time in the cooking history of my kitchen, I followed the recipe. Almost. I added pecans instead of walnuts and I altered the amount of rice and lentils because I wasn't adding eggs. And I didn't pan fry them, I baked them. So almost followed it. But this may have been the best thing I've ever eaten. Still reigning supreme is the Quinoa Beet burger at Cheesecake Factory (I know, just a cozy little spot) but this beet burger was so close. It was so good. If you have a food processor, you should make these. Also, I know I put beets in my juicer pretty regularly, but I don't like beets. And I was nervous. Even after the burgers were plated I was scared. Don't be. Make these.

Hopefully their beet-y powers will fuel the super fun weekend we have planned. We have friends coming in for an epic slumber party, beer tastin', river floating, and belly aching laughing.
