A cake that you can make.

Having lots of cakes to buy for people is not a problem.  When celebrations are almost daily and you have a penchant for expensive bakery items, it can be.

And when you don't eat dairy and can't even enjoy all that you buy, you are just sad.  When I first stopped eating most of what makes celebratory items delicious, I began making this cake.  And it is so good.  If you've ever had a molten lava cake, it is similar but uses no eggs or butter.  The only items I subbed out were a quarter cup of water for bourbon (too much, I'd use less next time, unless you love bourbon, and then by all mean, party on) and I used coconut oil instead of vegetable oil.  I also didn't use the glaze recipe, no reason other than most regular frosting is vegan (full of garbage, but vegan).  So so so so good.
